4 pounds beef round steak, trimmed and cut into strips
4 C. cup thinly sliced onion
6 C. cups low sodium beef broth
1/2 C. teriyaki sauce
1/4 C. grated fresh gingerroot
3 C. thinly sliced carrot
12 cups broccoli florets
Instructions
Heat the oil in a large skillet with a tight-fitting lid. Add beef strips and sliced onion and cook until beef is just barely pink but browned on all sides. Do not cook all the way through!
Add broth, teriyaki sauce and gingerroot; bring mixture to a boil then reduce heat, cover and gently simmer for 20 to 25 minutes.
During the last 15 minutes of cooking time, add carrot and broccoli; cover and simmer until veggies are tender-crisp.
