2 tblspn sherry vinager, red wine vinager, or freshly squeezed lemon juice

1 small garlic clove minced

1 tblspn hot pepper or to taste

1/4 cup peanut or extra virgin olive oil

6 cups cored and shredded green and/or red cabbage

1 lrg red or yellow pepper roasted and peeled, seeded, and diced or shredded

1/3 cup diced scallion more or less

salt and pepper

Instructions |

|
whisk the mustard, vinager, garlic, and hot pepper together in small bowl. add the oil a little at a time whisking the entire time.

combine cabbage, peppers, and scallion and toss with the dressing. season with salt n pepper and refrigerate overnight.
