For 1 serving- Place a piece of fish (at least 1/4 lb) in a good sized piece of waxed paper; salt and pepper it and add lemon butter or a piece of butter. (To make lemon butter, add 1 Tbsp of lemon juice to 3 Tbsp of melted butter.) Wrap wax paper around the fish, turning it on all sides. Then wrap well in a bag or newspaper that has been soaked in water. Have a good bed of coals ready and place the packet on top of the coals. Leave for about 20-30 minutes, depending on the size of the fish and turn once. If paper becomes too dry, remove from teh fire and wet it again. Then return to coals. Cooks by steaming.
