In a small bowl, combine the softened butter and crumbled blue cheese. Liberally spread the blue cheese butter on each cut side of the hoagie rolls. Place a grilled chicken breast on each bun. Wrap each sandwich in a square of heavy-duty aluminum foil. Place on the grill and close the lid. Grill for about 20 minutes, or until the sandwiches feel hot all the way through.

While the sandwiches are grilling, make the coleslaw. Place the shredded cabbage and blue cheese in a large bowl. In a small bowl, combine the lemon juice, vegetable oil, mustard, sugar, salt, and pepper. Whisk to blend, pour over the cabbage, and toss well to coat, Serve immediately alongside the sandwiches.
