3 cups vegetables of your choice (broccoli, zuccini, spinach, mushrooms, tomatoes, etc)
4 cups egg beaters or liquid egg whites
salt
pepper
onion powder
additional seasonings to taste
Instructions
Lightly steam, microwave, or saute the vegetables of your choice. Do not overcook.
Lightly spray a 9 x 13 pan with cooking spray.
Spread vegetables into the 9 x 13 pan.
Sprinkle vegetables to taste with seasonings.
Pour 4 cups of egg beaters or liquid egg whites over the vegetables.
Bake in preheated oven at 350 degrees for 45-40 minutes until firm.
YES- 1/2 of the pan is 1 lean and green meal.
