Melt butter in a frying pan, add the onion and
garlic, and cook gently until soft, about 5
minutes. in a large bowl lightly whisk the eggs
and milk together. Sift the flour on top and whisk
until there are no lumps. Stir in the corn,
coriander, softened onion and garlic and season
with salt and black pepper. Add a knob of butter
to the frying pan. In batches, drop in large
tablespoonfuls of the fritter muxture and cook on
both sides until golden, about 4 minutes. Makes
about 12 fritters.
