3 cups sliced veggies of choice (think bell peppers, onions, broccoli, squash, zucchini, etc)
1 cup of raw spinach
1 medium orange, sliced
1/2 tablespoon of olive oil
2 tablespoons of low-sodium soy sauce
seasonings of choice (think ginger, turmeric, curry, cumin, etc)
1/4 cup of water
Instructions
1) In large skillet, heat olive oil on medium-high heat. Once heated
added in all veggies (exclude spinach) and replace lid.
2) Lift lid every so often to stir, for a total of about 5 minutes.
3) Next, add in spinach and 1/4 cup of water. Replace lid and allow
veggies to steam for about 2 minutes. Afterwards, add in
seasonings and turn down heat to low/medium low.
4) Add in chicken, rice and soy sauce. Once everything is heated
through, stir, pour into bowl and enjoy!
