2 lbs fresh asparagus, trimmed
|
|
1 tbsp olive oil
|
|
2 medium tomatoes, seeded and chopped
|

1/2 C crumbled feta cheese
|
|
kosher salt to tast
|

|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|

Instructions |
|
|
Arrange asparagus in an ungreast 13x9 baking dish. Drizzle with oil and sprinkle with salt.
|
|
|
Bake, uncovered, at 400 degrees for 15-20 minutes or until tender.
|
|
|
Transfer to serving dish; sprinkle with tomatoes and feta cheese.
|
|
|
Serve immediately.
