Partially cook sausage/bacon, drain, set aside. Stir grits into boiling water, add salt. Return to boil, reduce heat and cook 2 1/2 to 5 minutes, stirring frequently until grits are thickened. Remove from heat. Add butter and cheese, stir until melted; add meat(save a little for the top). Gradually stir in eggs, stir constantly. Pour into buttered 12x8x2 baking dish. Sprinkle on remaining meat. Bake for 30 minutes.
