3 eggs

2.5 cups all-purpose flour

whole wheat flour (up to 1 cup, replace white flour)

1 tablespoon sugar, maple, or agave

4 teaspoons baking powder

1/4 cup vegetable oil
|

1/4 teaspoon salt
|
|
1 teaspoon vanilla extract (opt)

Instructions |

Stir together milk and vinegar. Wait 15 minutes. Get out eggs so they
can warm up a bit.

Preheat waffle iron. Beat eggs in large bowl until fluffy. Beat in
everything else, just until smooth.

Spray preheated waffle iron with non-stick cooking
spray. Pour mix onto hot waffle iron. Cook until
golden brown. Serve hot.
