Heat pot or dutch oven on medium high heat. Add oil. Add onion, garlic and ginger
and
reduce heat to medium. Add carrots and sauté for 5 minutes. Add water (and
apple) and salt.
Simmer until carrots are tender, about 12 minutes. Let cool. Add miso and pureé
everything
in blender or with stick blender until smooth. Return to pot,add cayenne (lemon or
orange
juice if desired) and heat slowly.
