Directions
1. Preheat oven to 400 degrees F. Line a baking
sheet with foil and spray it with olive oil
cooking spray.
2. In a medium bowl, whisk egg whites until
frothy.
3. In a large bowl, mix together the bread crumbs,
salt, pepper, garlic powder and paprika.
4. Cut potatoes in half lengthwise, then cut each
half in two, and then cut each quarter into 1/4-
inch-thick fries. Pat dry using paper towels.
5. Place fries in the bowl with the beaten egg
whites to coat.
6. Transfer fries to the bowl with the breadcrumbs
mixture. Toss to coat.
7. Arrange fries in a single layer on prepared
baking sheet, spacing them a little (if they
touch, the egg whites will cause them to stick to
each other). Spray with olive oil spray.
8. Bake 15 minutes. Remove baking sheet from oven.
Carefully turn fries. Spray again and bake 15 more
minutes. Serve immediately.
