1/4 tsp garlic powder (or your choice of spice mix)
1 large yellow squash, thinly sliced lengthwise
1 large zucchini, thinlyl sliced lengthwise
1/4 C shredded mozzarell cheese
1 large tomato, thinly sliced - for easier slicing, use a serated bread knife to slice tomatoes
Instructions
1. Preheat oven to 350 F. Lightly spray small loaf pan with cooking spray. Combine seasoning mix, pepper and garlic powder in a small bowl.
2. Place one layer of squash and zucchini in bottom of loaf pan. Sprinkle with 1/3 of seasoning mixture and 1 tablespoon of cheese. Layer tomato slices over squash. Top with 1/3 of seasoning mixture and 1 tablespoon of cheese. Top with remaining squash, seasoning mixture and cheese. (I'm not this careful about my measurements, a lot of times I'll just fill up a glass pan with as many layers as what will fit til I run out of veggie slices)
3. Bake 35-45 min or until vegetables are tender and cheese is melted. Remove from oven and cool slightly before slicing. (when I do a larger pan I'll let it bake longer, also if you start to see the cheese around the outside starting to brown you're pretty close to done and can pull it out)
