1. Bring the water to a boil in a large pot. Add the steel cut oats and salt. Stir.
2. Reduce the heat to medium low and cook for 30 minutes. Make sure you stir the oats occasionally so they don’t stick to the pan.
3. When the oats start to thicken, (about 30 minutes in), add in the milk and vanilla. Stir and cook another 10 minutes.
4. Add on optional toppings of choice
While sharing this recipe at The Lansing Inn, many tenants discussed their health problems and all the medications prescribed to treat them. I asked if their Doctor ever made suggestions about how their diet could also affect their health. Most of them said, “no”. The tenants who said, “yes” were diabetic and struggled to gain access to low glycemic foods that would help prevent high blood sugar. They all expressed frustration about this.
