2 pkg. (7 1/4 oz. each) macaroni and cheese dinner mix
2 lbs. ground beef
1 sm. onion, chopped
1 can (14 1/2 oz.) diced tomatoes, undrained
1 can (10 oz.) diced tomatoes and green chiles, undrained
1 can (8 oz.) tomato sauce
2 T. chili powder
1 t. garlic salt
1/2 t. ground cumin
1/4 t. crushed red pepper flakes
1/4 t. pepper
2 c. (16 oz.) sour cream
1 1/2 c. (6 oz.) shredded Mexican cheese blend, divided
Minced fresh chives and additional sour cream, optional
Instructions
Set aside packets from dinner mixes. In a large saucepan, bring 2-qt. water to a boil. Add macaroni; cook for 8-10 mins. or until tender.
Meanwhile, in a Dutch oven, cook and stir beef and onion over medium heat for 6-8 mins. or until beef is not longer pink; drain. Stir in the tomatoes, tomatoes and green chilies, tomato sauce and seasonings. Drain macaroni; add to beef mixture. Stir in contents of cheese packets, sour cream and 1 c. cheese.
Transfer mixture to a greased 13-in. x 9-in. baking dish; top with remaining cheese. Bake, uncovered, at 350 degrees for 20-25 mins. or until bubbly. If desired, sprinkle with chives and serve with sour cream.
