-In blender, pulse parsley then add garlic, 1/2
cup EVOO, 1/2 tsp. oregano, vinegar, red pepper,
s&p.
-Transfer to bowl, let sit 2 hours
-Preheat grill Med-High heat
-Brush pork with EVOO and rub 1 tsp. coarse salt,
2 tsp. oregano and garlic powder on pork.
-Grill pork, turning often, about 35 min. to about
150 degrees.
-Let pork rest off heat for 20 min. before
slicing.
-Thinly slice, drizzle with sauce
