1 x small butternut pumpkin cut into 2cm size pieces
2 x large onions peeled and chopped
2 x large kumara peeled and cubed like pumpkin
3 x Tblsp olive oil
1 x tsp garlic salt
Freshly ground black pepper
1 x 250gr block feta cheese cubed
1/2 cup parsley chopped
3 x Tomatoes chopped ( optional )
DRESSING-
1/4 cup olive oil
Juice and grated rind of 1 orange
1 x Tblsp white wine vinegar
Instructions
Preheat oven to 200' Place carrots, parsnips,
pumpkin, onion and kumara in a roasting dish.
Drizzle with oil, tossing veges to coat well.
Sprinkle with garlic salt and pepper and roast for
30 to 35mins until crispy and cooked through.
Tip veges into a large bowl. Add feta, tomatoes and
parsley. Pour over dressing and toss well. Serve
hot or cold
