1 1/2 x cups healtheries simple gluten free baking mix
1 x tsp baking powder
1 - 2 tsp ground ginger
Icing-
75g x butter
1 x cup icing sugar
2 x Tbsp golden syrup
3 x tsp ground ginger
Warm all together stirring until butter is melted
Instructions
Heat oven to 180'
Cream butter and sugar until light and fluffy. Sift
all other ingredients and add to creamed mixture.
Mix until no longer crumbly. Knead and press into
tin. Bake 20 - 25 mins.
Pour over icing while warm and slice before it gets
too cold to avoid crumbling
