1 lb thin-sliced boneless, skinless chicken breast
2 Tblsp evoo
3 pt grape tomatoes
2 cloves garlic, minced
2 1/2 ox sliced part-skim mozzarella
1/4 cup fresh basil leaves
Instructions
1. Whisk together flour, 2 tsp of the seasoning, and 1/4 tsp each
salt and black pepper. Dredge chicken in flour mixture to coat.
2. Heat oil in large broiler-safe nonstick skillet over medium-high
heat. Add chicken and brown, turning, until golden and cooked
through, 4 to 6 minutes. Transfer to plate.
3. Heat broiler. Add tomatoes and remaining 1/2 tsp seasoning to
skillet. Cook, stirring, until tomatoes are broken down and
becoming saucy, about 6 minutes. Add garlic and cook 1 minute
longer. Remove pan from heat, nestle chicken into sauce, and top
with cheese.
4. Broil chicken 6 inches from heat until cheese is golden, about 2
minutes. Serve topped with basil.
