Trim tops off peppers, remove seeds. Boil in large pot of salted
water for 5 minutes. Cool in cold water and drain.

Mix ground bison, egg, oatmeal, 1/4 cup of tomatoe sauce -
season to taste. Stuff peppers with meat mixture.

In large skillet saute onions, garlic in 1 Tbsp oil till soft. Add rest of
tomatoe sauce, seasonings and cook X 8 minutes.

Place peppers upright in casserole dish. Pour sauce over them. Bake
350 degrees for 45 - 60 minutes.

1 pepper per person - may double easily if you want more. Serve with cream corn and fruit.
