Chicken parts, skin removed - 3 lbs (1.35 kg), thighs and drumsticks or breasts
Brown sugar, packed - 1 cup (250 ml)
Water - 1 cup (250 ml)
White vinegar - 1/2 cup (125 ml)
Ketchup - 2 tbsp (30 ml)
Soy Sauce - 1 tbsp (15 ml)
Cornstarch - 3 tbsp (45 ml)
Water - 2 tbsp (30 ml)
Instructions
Arrange Chicken in 3 quart (3.5 L) casserole.
Mix sugar, first amount of water, vinegar, ketchup, and soy sauce together in saucepan over medium heat.
Mix cornstarch in remaining water. Stir into saucepan until it boils and thickens.
Pour over chicken. Cover. Bake at 350 F(180 degrees C) for 1 1/4 hours or until tender. Shorten cooking time if chicken is boneless!!!
Spoon sauce over chicken before serving.
VARIATION: Add some pineapple tidbits, chopped green or red pepper, chopped onion, or other vegetables, before baking.
