Place chicken in large saucepan and cover with water. On high heat, cook about 15 minutes. Drain and cool. Cut into 1 - inch chunks and season with a little salt and pepper. Place in large salad bowl. Add apples, celery, and walnuts. Stir in yogurt and mayonnaise. Toss to mix well. Serve over shredded lettuce. (May be served at room temperature or refrigerated several hours).
