Add the marinade ingredients to a shallow bowl, and stir to combine.
Add the tempeh to the marinade and gently stir to coat the pieces. Marinate at room temperature for 30 minutes, turning the tempeh from time to time.
In a medium skillet on medium-high heat, sizzle tempeh for 30 seconds. Reduce the heat to low and cook, covered, for 3 minutes. Flip the tempeh and cook, uncovered, on medium heat for 3 to 4 more minutes, until the tempeh is browned. Set aside.
Heat the tortillas in a dry skillet until they are warm and pliable, and then fill them with the sizzled tempeh, tomato, lettuce and your choice of extras. Serve immediately.
