Preheat oven to 400 degrees. Cut chicken into 1 inch chunks and cook on medium high heat in large skillet with a little oil. Cook for about 10 minutes. Drain and stir in taco seasoning, bell peppers, and 3/4 cup water. Reduce heat, simmer and cook for additional 10 minutes. Stir several times. Spoon into sprayed 9 inch deep dish pie pan and sprinkle with cheese. Prepare corn muffin mix with egg and milk and mix well. Spoon over top of pie and bake for 20 minutes or until top is golden brown. Let stand for about 5 minutes before serving.
