6 firm plum tomatoes, centers removed, diced medium
1 Tbl. sesame seeds
One 6-ounce package Tempeh Bacon, cooked (optional)
2 packages spring roll wrappers
2 firm avocados
2 cups Thousand Island dressing
Instructions
Gently toss the first six ingredients in a bowl with just enough dressing to coat.
Select a dish or pan large enough to lay the rice paper out flat. Add about 1 cup of very warm water to the dish or pan and soak 1 sheet of rice paper for about 20 seconds, or until paper has slightly softened. Place the paper on a cutting board and rub with your fingers to flatten and incorporate more water.
Place 1/2 c. of filling on the rice paper, slightly below the center, working from the edge closest to you. Top with two avocado slices.
Pick up the edge closest to you and fold it over the mound. Fold the right and left sides toward the center. Roll burrito style.
Separate rolls with wax paper and refrigerate up to two hours. Slice in half at an angle and serve with dressing on the side.
