Preheat oven to 350 degrees. mix flour and taco seasoning in large shallow bowl. Mix eggs and 3 Tablespoons water in another shallow bowl and beat together. Dip each chicken breast in egg mixture. Dredge in flour taco seasoning mixture, pressing to apply lots of flour mixture. Place in sprayed 11 x 15 inch baking pan and arrange so that chicken pieces do not touch. Bake for 55 to 60 minutes or until juices run clear. About 10 minutes before chicken is done, place spanish rice in saucepan and stir in cheese. Heat, stirring constantly, just until cheese melts. Spoon onto serving platter and place chicken pieces over hot rice.
