Heat a 4- to 5-quart pot over high heat, add the oil, and wait until it shimmers. Add the onions and cook, stirring with a wooden spoon, until translucent, about 8 minutes. Add the garlic and cook 2 minutes more. Stir in the green chiles, cumin, oregano and cayenne. Add the beans and broth and bring to a simmer. Add the Chick'n and allow the chili to simmer lightly for 10 to 15 minutes.
Just before serving, add the mozzarella or Jack cheese and stir until melted. Season to taste with salt and pepper. Stir in scallions and serve.
