In a large skillet, heat the oil over medium heat. Add the onion, cover and cook until slightly softened, about 5 minutes. Add the carrots, cover and cook until softened, about 5 minutes more.
Add the potatoes, seitan, marjoram, fennel seed, salt and pepper. Cook, uncovered, turning occasionally, until nicely browned, about 10 minutes. Taste and adjust seasonings, if necessary. Serve hot, drizzled with ketchup.
