Mix mustard, paprika, salt, pepper, and cayenne.
Rub over brisket with spatula. Marinate 24-48
hours. Prepare smoker. Smoke 6 hours. Wrap in foil
and place on baking sheet and bake in a 250° oven
4-5 hours until you can pry meat apart easily and
temp. is 190°-200°. Total cooking rime 14-16
hours. Slice against the grain and serve with
barbecue sauce.
