Put the onion in heatproof bowl.
Mix sugar, vinegar, salt, pepper, cinnamon, and garlic in a saucepan. Bring to a boil.
Pour the boiling mixture over the onions. Cover and allow to cool to room temperature.
Chill overnight. Drain before serving.
Will keep up to 3 weeks.
