Heat oven to 350
Coat a 2 qt broiler safe oval baking dish with Pam.
Bring a large pot of lightly salted water to a boil. Once water boils, add penne . Cook 6 min., then drain. In a large bowl, toss together the ceddar, Gruyere, & Asiago, set aside.
Meanwhile , melt butter in med. sized saucepan over med. heat. Whisk in flour until smooth & slightly bubbly. In a thin steam, whisk in milk. Stir in onion powder, salt, & cayenne. Bring to a boil over medium high heat. Reduce heat & simmer 3 min. Remove from heat; whisk in 2 1/2 c. cheese mix.
In pasta pot, stir together the cooked penne & the cheese sauce. Pour half into prepared dish. Sprinkle with generous cups of cheese. Spoon remaining penne in dish & top with remaining cheese.
Bake at 350 for 20 min. Increase oven temp to broil & cook 3 min. Cool slightly before serving.
