Melt the butter in a medium saute pan over medium heat until the butter foams. Add the onions and cook for 5 minutes or until translucent. Add teh apple bits and cook for 5-7 minutes or until the apples and onions caramelize. Add teh cider vinegar adn cook for another 30 seconds. Remove from the heat and cool completely. Combine the remaining ingredients with the cooled apple-onion mixture. This mayo may be prepared 1 day in advance and stored, covered, in the fridge.
