3 cups potatoes, peeled and finely shredded; well drained
2 eggs well beaten
1 1/2 Tbsp flour
1/8 tsp baking powder
1/2 to 1 tsp salt
1/2 tsp grated onion
Instructions
Preheat a greased skillet.
Combine potatoes and egg; set aside.
Combine dry ingredients and onion. Stir into potato mixture.
Drop by tablespoon onto skillet. Brown lightly on both sides.
Yields 12 (2 inch) pancakes.
Serving
Suggestions
Serve warm with maple syrup or fruit syrup of your choice.
