     Pulao (Mixed Vegetable Rice)

Ingredients
3 cups long grained rice (basmati) , washed and drained
7 tbsp oil
1 tsp cumin seeds (jeera)
2 bayleaf (tejpatta)
2 sticks of cinnamon (dalchini)
4 black cardamom (badi elaichi)
5 cloves (laung / lavang)
3 medium sized carrot , peeled and cut into 2
1/2 cm long strips
 
1 cup green peas
4 tsp salt

Instructions
Heat the oil in a pressure cooker and add the cumin seeds, bay leaves, cinnamon, cardamoms and cloves and saute for 2 minutes. Add the rice and saute till rice turns pink. Add the salt and 3 cups water, mix well and close and pressure cook for 3 whistles. Allow the steam to escape before opening the lid.
Serving Suggestions
Serve hot.
