4C. Chicken Stock (I use 2 pods of Homemade stock by Knorr)
1C. Water
Instructions
Either soak beans overnight or follow the 'quick soak' instructions on the back of the package.
After beans have soaked, boil for 45 minutes. (Add water if needed and use spoon to remove foam).
Chop celery and onion in cuisinart (do not puree).
Heat chopped bacon in pot, then remove.
Add olive oil. Then add garlic, onion, celery, parsley, thyme, dill, pepper. Cook for 4 minutes. Stir occasionally.
Add tomatoes, bacon and chicken stock to the mixture. Add 1 cup water and simmer.
When beans are done boiling. Drain beans, then add them to the soup mixture. Simmer 30 minutes.
