Melt the coconut oil if necessary (only in the winter). Mix in honey, peanut butter, brown sugar and flaxmeal. Once mixed, add the chocolate chips and start with 3 cups of oats. If the mixture looks like it needs more oats, add another 1/2 cup and combine. Spray a 9 by 13 pan and spread the granola mixture into the pan. Use the back of a spatula to pat it all down, and the sides down also. Bake at 350 for about 18 min.
