Spray roaster pans with Pam.
Layers-
chicken
ground skins, gizzards, heats
onion
celery , diced small
cubed bread, sprinkled with water until quite sticky and damp, mixed with sage, pepper and salt.
Pour gravy over top and let soak down into chicken. Use spoons and spatulas to see that gravy gets all the way through. Bake at 350.
