4 large carrots (quartered lengthwise and cut into pieces)
1 can tomato soup
1 bay leaf
3 med potatoes, quartered
2 slices onions
6 oz can mushrooms
1 pkg frozen peas
1 c water
Instructions
Grease a large casserole. Combine the beef, carrots, tomato soup, bay leaf, potatoes and onions. Cover and bake in a 275 degree oven for 4 hours. Remove from oven and stir in frozen peas and mushrooms and if needed a little water. Cook 1 hour longer.
Joanne made this often when her three girls were in school, and her husband, Rich, was busy coaching basketball. She suggests serving with a bran muffin and fresh fruit.
