Melt butter over medium heat. Stir in sugar, cinnamon, salt, and vanilla. Cook til thick and bubbly. Pour over the popcorn and stir until the popcorn is evenly covered. Spread the popcorn into a large roasting pan.
Bake in preheated oven for 10 mins, then turn off the heat, and allow the popcorn to stay in the oven for 20 more mins. Remove from oven and cool completely.
