4 c grated carrots (or two 10 oz bags grated carrots)

1 yellow squash, cut into matchsticks

4 scallions, white and tender green parts only, thinly sliced

DILL DRESSING-
|
|

2 T each fresh lemon juiec and white balsamic vinegar
|
|
1/4 c extra virgin olive oil
|
|
1/2 c plain yogurt
|
|
2 t dijon mustard
|
|
2 T sugar
|
|
2 T chopped fresh dill
|
|
1 T chopped fresh mint
|
|
1/4 t salt
|
|
freshly cracked black pepper, to taste
|
