Prepare artichokes, fill dutch oven with water, add lemon juice. Trim leaves from top of artichoke. Remove outer layers of leaves from the stem end and snip all remaining spikey tips from outer layers. Trim an inch off bottom stem and use veggie peeler to remove fiberous outer layer. As each artichoke is prepared drop it into the lemon water to prevent from turning brown. when all prepared , cover pan and bring to a boil. Boil until base of stem can be pierced with a fork, 12-15 min.

Transfer to a cutting board and let stand until cool enough to handle, 10min. Meanwhile preheat grill to medium heat. Slice artichokes in half lengthwise scoop out the choke and first few layers in center until bottom is revealed. Brush each half with oil, salt and pepper. Grill untill tender and lightly charred, 5 min each side. Transfer to serving plate, squeeze half a lemon overthem and garnish with rrmaining lemon half cut into 4 wedges.
