1 small red onion, cut in half then cut into thin slices
1 c fresh corn kernels, blanced for 1 minute then cooled
2 celery ribs, sliced (about 1 cup)
1 c cooked garbanzo beans
1 small jicama, peeled and cut into matchsticks
3 beefsteak tomatoes, cut into 6 wedges
CREAMY SOUTHWESTERN DRESSING-
1/2 c favorite salsa (mild, med or hot)
juice of 1/2 lime
1 garlic clove, minced
1/2 c extra virgin olive oil
1/4 c sour cream
sea salt and freshly cracked black pepper
2 T chopped fresh cilantro
2 minced scallions, white parts only
Instructions
Place lettuce in large bowl. Sprinkle with onion, corn, celery, beans and jicama. Gently toss. Randomly tuck tomato wedges into the salad. Serve individual portions with a drizzling of Creamy Southwestern Dressing.
CREAMY SOUTHWESTERN DRESSING- In blender, combine all ingredeients but cilantro. Blend 30 seconds. Stir in the cilantro and add salt and pepper to taste. Store in airtight container in fridge. Dressing may be made 1 day in advance.
