Mix flour, soda and salt. Set aside.

In small bowl combine buttermilk and mashed bananas. Set aside.

In large mixing bowl; combine butter, sugar, eggs and vanilla. Beat
well for 2 to 3 minutes. Stir in banana mixture. Add flour mixture
& nuts. Mix just until combined.

Pour into 4 greased mini loaf pans. Bake at 350 degrees for 30
minutes. Adjust bake time for muffins, approximately 15 minutes, until
golden brown on top.

I often substitute 1 tsp vinegar or lemon juice combined with enough milk to make 1/4 cup. Let stand at least 5 minutes. Substitute for buttermilk.
