1 - 12 ounce skinless, boneless chicken breast half, chopped
2 Tablespoons soy sauce
2 teaspoons sesame oil
1/4 cup chopped onion
1/2 of 10 oz. pkg. frozen mixed vegetables, thawed
4 cups cooked white rice
3 large eggs
salt and pepper
Instructions
1. Ina a bowl, toss chicken with soy sauce and sesame oil. Cover, let stand for 10 minutes.
2. Warm a skillet over medium-high heat. Stir-fry chicken and marinade until cooked through, about four minutes. Transfer chicken to a plate. Warm vegetable oil in same skillet over medium heat. Saute onion for three minutes. Add mixed vegetables, saute for one minute. Increase heat to medium-high, stir in rice and cook for three minutes.
3. Form a well in rice mixture. Add eggs to well, scramble just until soft. Mix into rice, season with salt and pepper. Let cook undisturbed until a crust forms, about one minute. Turn rice with a spatula, repeat until rice is uniformly golden. Add chicken and stir to combine.
