1. Preheat oven to 375. In 12 inch skillet heat oil over med-
high heat. Add onion cook 5 mins or until onion is tender. Add
spinach cook 5 mins or until leaves wilt.stir in 1/2 tsp salt and
pepper.
2. In medium bowl stir together pumpkin,half and
half,sage,nutmeg 1/2 cup mozzarella cheese,1/2
cupparmesan cheese and 1/2 tsp salt and pepper.
3. In 9x9 inch glass,ceramic or metal baking dish,spread 3/4
cup pumpkin sauce in bottom of dish. Place noodles in single
layer over sauce,top with spinach mixture and sprinkle with 1/2
cup mozzarella cheese repeat layering 3 more times. Top with
remaining sauce and 1/2 cup Parmesan cheese. Cover dish
tightly with foil. Bake 20 minutes.remove foil and bake 20-22
minutes longer or until top is golden brown. Let stand 10
minutes before serving. Lorna qwas able to use 11x7 pan and
