Bake potatoes at 400 degrees for 45 minutes to an hour depending on size. Remove from oven with oven mitt, let cool for 10 minutes (make sure they are soft). With mitt hold and cut an oval opening in potatoes, with spoon scoop out potatoe, save shell (potato skin)!
In large bowl mix potatoe "insides", sour cream, milk, cheese, cream cheese, and salt & pepper. Mix until smooth and creamy. (Adding more milk if needed).
Spoon mixture back into shells. Sprinkle with cheese if you like. Place on a cookie sheet and back into oven at 400 degrees for 10 minutes.
Remove, server, enjoy!
