1 envelope taco seasoning (or your own Mexican mix)
(I use ground cumin, chili powder, onion powder, garlic powder & salt to taste)
2 1/2 Cups corn chips (I use Fritos)
1 - 15 1/2 ounce can refried beans
2 ounces shredded cheddar cheese (1/2 cup)
Instructions
In skillet brown the ground beef. Add 1 1/2 cups of the tomato sauce and the taco seasonings, stir to mix well.
Line bottom of casserole dish 11 3/4 x 7 1/2 x 1 3/4 inch with 2 cups of the corn chips; crush remaining chips and set aside. Spoon meat mixture over corn chips in baking dish. Combine remaining tomato sauce and beans; spread over cooked meat mixture.
Bake at 375 degres til mixture is heated through, about 25 minute4s. Sprinkle cheddar cheese and crushed chips over the casserole and continue to bake until the cheese melts (apprx 5 minutes).
I serve guacamole and extra chips on the side.
