Simmer chicken in water to cover until cooked. Reserve liquid, cool and remove fat. Lay bite-size pieces of chicken in a flat baking dish. Mix soups and sour cream; spread over the chicken.
Make the dressing aaccording to package directions but use two cups of the reserved liquid instead of water. Flavor the dressing generously with poultry seasoning and thyme. Spread over chicken and bake for 35 to 40 minutes in a 325 degree oven.
