Cook bacon until crispy. Bring large skillet sprayed with nonstick spray to med-high heat. Add onion, butter and cayenne pepper. Sprinkle with 1/4 t. salt. Cook and stir until slightly softened, 3-5 minutes.
Reduce heat to med-low. Stirring frequently, cook until brown and caramelized, 20-25 minutes. Remove from heat. Meanwhile, bring large pot of water to boil. Add squash and cook until very tender, about 10-15 minutes.
Preheat oven to 375. Spray 8x8 baking pan with nonstick spray. Drain squash and transfer to large bowl, Mash with potato masher. Add garlic, black pepper and remaining 1/2 t. salt. Add cheese wedges, breaking them into pieces, mix well.
Evenly transfer mixture to baking pan, top with onions. Chop or crumble bacon and sprinkle over onion. Bake about 15 minutes.
