3 lb pork roast
|

1 1/2 tsp ginger
|
|
1/2 tsp pepper
|
|
1/4 tsp cloves
|
|
1/8 tsp garlic
|
|
2 bay leaves
|
|
1/4 C rum
|
|
3/4 C brown sugar
|
|
2 T cornstarch
|
|
|
|
1 C condensed chicken broth
|
|
1/4 C lime juice
|
|
1/2 C rum
|
|
pork drippings
|

Instructions |
|
|
Mix together cloves,ginger,pepper,garlic,bay
leaves. Rub onto roast.
|
|
|
Bake in a 325 degree oven for approximately 2
hours. The last 1/2 hour mix together 1/4 C rum,
and 3/4 C brown sugar. Place onto roast.

|
For gravy, mix together; drippings, 1/4 C rum,lime
juice,chicken broth,cornstarch. Boil until
thickened stirring constantly.
